The rigour and authenticity of craft roasting
We at Lenoir & Lacroix believe that our task as roaster is to appropriately acknowledge all the work and the passion that coffee cultivation demands. To accomplish this, our work, although a craft, is among the most rigorous in order to properly respect the authenticity of the various exceptional origins. Through our many years of experience in the field of coffee, we have built a solid reputation in the development of coffees that are exceptional, cup after cup. Since the company’s earliest beginnings, our objective has been simple: give coffee back the pedigree it deserves.
As a micro-roaster since 2005, we have chosen our values:
- Production that respects the environment; no CO2 emissions.
- Purchasing direct or from fair-trade, organic coffee cooperatives.
- Development of long-term relationships with the selected coffee producers.
- Gastronomic explorations with coffee and tasting experiences.

Historic and philosophy
In 2004, Christian Lacroix traveled to California to carry out a consulting contract for development of a micro-roaster. A businessman from Long Beach had retained Christian Lacroix’s services and experience in order to create a unique and different micro-roaster. When the mandate was completed, Christian returned to Quebec and began coffee roasting operations. Lenoir & Lacroix was founded after reflections on the approach to micro-roasting, in a spirit of renewal. Shortly after operations began, Christian’s brother Stéphane joined the business.
So these were the primary motivations for opening this micro-roasting operation.
Important values were underscored in the development of Lenoir & Lacroix, firstly respect for coffee. It is important to the two brothers to take the necessary time in roasting in order to fully reveal the aromas and flavours of the selected origin.
Secondly, ensure preservation of the soil and environmental conservation, as well as the quality of life of the producers, by choosing organic fair-trade coffees.
Thirdly, respect for the environment: the company aims to produce zero CO2 emissions.
Finally, with respect to gastronomic enjoyment, the craft roasters at Lenoir & Lacroix develop gourmet coffees in order to enhance the flavours of various cheeses, chocolates, different alcoholic beverages and even certain foods. Our 30 years of experience in the field of coffee and our extensive gastronomic expertise enable us to offer you blends that are surprising yet balanced. To date, we have matched our coffees with more than 60 local Quebec cheeses, several cocoas, as well as certain foods, every time creating exclusive new blends. The experience has been enjoyed by hundreds of coffee lovers since our aromatic adventures began.
